Frosé Strawberry Daiquiri

Ingredients (serves 8)  

  • 1 bottle dry rosé chilled (750 ml) 
  • ¼ cup rum 
  • 1 16 oz container frozen strawberries in syrup (partially thawed) 
  • 1 cup sliced fresh strawberries 
  • ¼ cup of sugar or to taste 
  • 3 cups of ice 

Method  

  1. Combine frozen strawberries, rum, sugar, and half of the rosé  
  2. Blend until combined  
  3. Add the remaining rosé and ice, blend until smooth  
  4. Serve

Aperol Spritz

Ingredients (serves 4)  

  • 400ml aperol  
  • 400ml prosecco  
  • 2 oranges  
  • 600ml soda water  
  • 4 cups crushes ice  
  • Garnish: 4 rosemary sprigs  

Method  

  • Fill 4 large cocktail glasses with crushed ice. Add 100ml aperol and 100ml prosecco to each  
  • Juice one orange and divide between glasses. Peel thin strips from the orange for garnish  
  • Slice the other orange and add to each glass  
  • Top with soda water and garnish with rosemary sprigs   

Pineapple and Passionfruit Mojito

Ingredients (serves: 4-6)  

  • 1 pineapple  
  • 50 ml pineapple juice  
  • 10 fresh mint leaves  
  • 2 limes slices  
  • 150ml rum  
  • 4 passionfruit  
  • Soda water  
  • To serve: ice, lemon, mint  

Method  

  • Blend pineapple, juice and sugar together until puree  
  • Combine the puree, rum and passionfruit in a jug with soda water and mix  
  • Serve
